Free-From & Vegan Vanilla Sponge Cake

This sponge traybake is baked in our Scottish bakery, which is completely gluten and dairy-free.

But as to what our gluten-free Vanilla Sponge is actually made with – a fluffy gluten-free sponge is perfectly flavoured with vanilla extract, smothered with creamy vanilla frosting and hand-decorated with multicoloured sugar confetti.

For the sponge, we use a gluten-free flour blend that includes soya, rice and gluten-free oat flour. This gives the sponge a soft, fluffy texture without any of the gluten. In replacement for butter, we use sunflower oil to keep the cake nice and moist and to make it vegan-friendly.

We also use a combination of cake batter thickeners instead of egg, ensuring the cake keeps its structure.

All of this amounts to a deliciously light and airy sponge cake that is sure to please absolutely everyone who tries it. The combination of the light sponge and sweet frosting makes for a truly mouthwatering treat, and the multi-coloured confetti adds a fun and playful finish.
